Pumpkin Spice Cupcakes

Pumpkin Spice Cupcakes

These pumpkin spice cupcakes are by far one of my most loved recipes. They taste like fall in your mouth and are the perfect treat for your loved ones. I pair these cupcakes with my cream cheese frosting. Add 2 tsp of ground cinnamon to make the frosting even more fitting!

Ingredients

  • 3/4 cup butter, room temp

  • 420g white sugar

  • 3 large eggs

  • 15 oz (1 can) solid-pack pumpkin (NOT PUMPKIN PUREE)

  • 290g all purpose flour

  • 1 tbsp pumpkin pie spice

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp ground cinnamon

  • 3/4 tsp salt

  • 1/2 tsp ground ginger

  • 1 cup buttermilk

Instructions

  1. Preheat oven to 350 degrees. Place cupcake liners in cupcake baking tray and set aside.

  2. Using a stand mixer, cream together butter and sugar until fluffy.

  3. Add eggs one at a time and mix well after each addition.

  4. Add can of pumpkin.

  5. In a separate bowl, combine flour, pumpkin pie spice, baking powder, baking soda, cinnamon, salt, and ginger. Mix with a whisk until combined.

  6. Add dry ingredients to wet ingredients, alternating with buttermilk. Mix well after each addition.

  7. Fill 24 cupcake cups 2/3 full with cupcake batter. Bake about 20-25 minutes or until a toothpick comes out of the center clean. (All ovens are different so I strongly suggest always double checking with a toothpick!!!)

  8. Allow the cupcakes to cool for 10 minutes before removing from the cupcake pan. Allow the cupcakes to completely cool on a cooling rack before frosting. I like to pair my cream cheese frosting (found here) with these cupcakes. Add 2 tsp of cinnamon to make them extra yummy!
