Banana Cream Cake

If you love Banana Cream pie, you will LOVE this cake! I got the idea for this cake when I first ate Jello banana pudding. It was so sweet but yummy! It just needed a little bit of cake and whipped cream to be perfect, and that’s when this cake was born!

This cake has four parts: vanilla cake layers, jello banana pudding, whipped cream, and vanilla buttercream. I included recipes for the cake and whipped cream below, and you can find my recipe for my vanilla buttercream here.

Vanilla Cake

Ingredients:

-300g all-purpose flour

-2.5 tsp baking powder

-3/4 tsp salt

-1/2 cup unsalted butter, room temp

-300g white sugar

-3 eggs, room temp

-1.5 tsp vanilla

-1 cup buttermilk

Instructions:

  1. Preheat oven to 350 degrees. Prepare 3 6-inch pans by lightly greasing the bottom and placing parchment paper.

  2. Whip butter on medium for one minute in a stand mixer using a paddle attachment.

  3. Add sugar and cream together (takes about 5 min).

  4. Add eggs one at a time, beating thoroughly between each addition.

  5. Add vanilla and mix.

  6. In a separate bowl combine flour, salt, and baking powder. Whisk together.

  7. Alternate adding the dry mix and buttermilk to the stand mixer. Mix well after each addition. Make sure your last addition is the dry mix.

  8. Pour the batter evenly among the 3 6-inch pans.

  9. Bake at 350 degrees for 30 minutes or until a toothpick comes out of the center clean.

  10. Cool on a cooling rack before frosting.


Whipped Cream

Ingredients:

-1 cup heavy cream

-1 tsp vanilla extract

-1 tbsp powdered sugar

Instructions:

  1. Place stand mixer and whisk attachment in the freezer for 15 minutes.

  2. In the chilled mixing bowl, add heavy whipping cream and whip on medium-high until stiff peaks form.

  3. Beat in vanilla and powdered sugar.


Assembling the Cake:

  1. Spread some buttercream on a cake board and place your first cake layer.

  2. Pipe a border on the cake layer with buttercream.

  3. In the center, add some banana cream pudding. (One box will make a lot more than you will need for this cake.)

  4. Add some whipped cream on top.

  5. Place the second cake layer and repeat steps 2-4.

  6. Add the final cake layer upside down.

  7. Crumb coat the cake with buttercream. Chill in the freezer for 30 minutes.

  8. Add a final layer of buttercream.
