American Buttercream Frosting

How to make not-too-sweet American Buttercream!


Personally, I find most American Buttercream recipes to be too sweet. This ABC is also semi-sweet, but it’s not mind-numbingly sweet like others.

A tip to make this recipe even less sweet is to leave out any sort of essence. The butter and sugar already create such a sweet combination, that you won’t need any extra flavoring!


Ingredients:

  • 1 cup unsalted butter, room temperature

  • 400g powdered sugar

  • 3 tablespoons heavy cream

  • 1 tsp Vanilla Extract

  • 1/4 tsp salt


Instructions:

  1. Beat the butter with a paddle attachment until it is smooth.

  2. Add the sugar and place a kitchen towel over your stand mixer. Make sure your mixing bowl is completely covered, and turn the mixer on low.

  3. Add heavy cream to the frosting one tablespoon at a time.

    If you want your frosting to be stiffer, add less heavy cream. If you want it to be more flexible, add more heavy cream.

  4. Add vanilla extract and salt.

  5. Whip until everything is evenly combined.

Tips

  • I like to leave the butter out on the counter for about an hour before I start to make the frosting so it’s soft to the touch. If you use cold butter, it won’t mix properly with the sugar and your frosting will not have the best consistency.

  • Play around with the butter to sugar ratio. If I am making frosting to pipe flowers for a cake, I typically add more sugar to stiffen the frosting up a bit. If I am making frosting to fill the inside of a cake, I tend to add less sugar and more milk.
